Mashed Potatoes with Grilled Mozzarella Topping

The ultimate, comforting dish you could have is the mashed potato. Topping is melting, stringy mozzarella cheese, this recipe is a must have for an winter menu.

  • 600 g potatoes-washed and peeled (choose desire, Desiree, Maris Piper, Russets or Yukon gold)
  • 1 tbsp salt
  • 3 large garlic cloves
  • 3 tbsp butter (unsalted)
  • 1/2 cup milk (warm)
  • 2 cups mozzarella cheese (shredded)
  • 4 tbsp parmesan cheese (finely grated)
  • salt & pepper to taste


  • Peel the potatoes and cut in same size pieces.
  • In a large pot of cold water, place the salt and potatoes over a high heat. Bring the potatoes to a boil and cook for 10-15 minutes until they are cooked all the way through. You can check this by inserting a fork in the potato. If it enters the potato easily then the potato is ready.
  • Strain the potatoes and return them to the pot on a low heat.
  • Using a handheld potato masher, mash the potatoes until all lumps are removed.
  • Add a 1/4 of the milk and a 1/4 of the butter while you continue to mash. Keep alternating until all the milk and butter is used. Continue to mash until the potatoes absorb all the milk and the butter is melted. Season the potatoes with a little salt and black pepper.
  • Remove from the heat and scoop the potatoes in a 20cm pie or casserole dish. Use a spatula to spread this out evenly in the dish. With a fork, run the it along the potatoes to give the potatoes a rough texture. Refer to the photo.
  • Top with the shredded mozzarella and place under a hot grill for 3 minutes. Approx. 180C marked grill.
  • Remove and top with the parmesan cheese. Return to the oven for a further 2 minutes or until the cheese is bubbling and shows signs of browning.
  • Remove and serve.


You may use olive oil in replacement of the butter.
Variations - you can add bacon bits, chives or other herbs in the mash potatoes before baking for extra flavour.
