This Lemon Herb Dressing packs all of the fresh summer flavours you’ll love in a quick and easy vinaigrette! This recipe is basically my go-to dressing every summer. It’s so delicious and full of lively flavours and goes well with any salad. Use it over a potato salad, add it to grilled fish or combine it together with a knob of butter on a sizzling steak.
We’re in the midst of summer now in Australia and loving every moment of it. The sky is a beautiful crystal clear blue and the sun is shining brightly. This is really one of my favourite times of year in Sydney. We have some of the world’s best beaches and perfect spots for summer picnics.
Fresh, cold salads are a refreshing welcome in this heat and perfect for the alfresco way of dining in the summer. Plus, we’ve been eating some heavy foods these last few weeks with Christmas and all, that my body naturally craves basic, light, fresh foods.
This Lemon Herb Dressing recipe has only 6 ingredients and YEP it’s packed with flavour!!
Don’t worry, you don’t need fancy tools or expensive ingredients to create this recipe. Simply use a bowl and a fork to whisk.
Let’s make some Lemon Herb Dressing!
Starting with the olive oil in a bowl, simply add the juice of a lemon, capers, dried oregano, chopped parsley, garlic and whisk together with a fork.

Lemon Herb Dressing
Ingredients
- 100 ml olive oil
- 1 whole lemon juiced
- 1 shallot finely chopped
- 1 clove garlic finely chopped
- 2 tsp capers drained, finely chopped
- 1 tsp flat-leaf parsley finely chopped
- 1 tsp dried oregano
Instructions
- Whisk all ingredients together in a bowl and season to taste.
