Honey roasted carrots are deliciously sweet, tender and is a perfectly simple side dish. With just a little honey and olive oil, these Honey Roasted Carrots with Herb Dressing takes them to a whole new level! The end result is simple, healthy herbed carrots with a zesty, refreshing dressing.
I have always loved carrots. Popping some crunchy carrot sticks into a container to munch on throughout the day and dunking them into hummus is my favourite afternoon snack.
I found the carrots that I have used in this recipe at a local farmer’s market. There is nothing I love more than to spend a Sunday morning at a farmer’s market. The colours, the sounds, the aromas coming from the stalls are all bliss to me! I love finding a seat on one of the milk crates with a good cup of steaming coffee and watching the crowds.
Farm Fresh Goodness
It is nice to see the baskets and market bags filled with fresh produce, knowing that we’re supporting local businesses and farmers. The other thing I love about farmers’ markets is that we are eating seasonally and knowing that the food has not been sitting on a supermarket shelf for weeks on end.
I love the rustic look of baby carrots with their leafy tops still attached. I also love supporting local farmers. Those farmers are the ones who bring the fresh fruit and vegetables from their paddocks to our plates. I think it is interesting to meet the people behind these products.
I grew up with herb-roasted carrots drizzled in olive oil. This Honey Roasted Carrots recipe is inspired by them, but this is even better. They have more flavour from the fresh herbed dressing which I’ve shared in my previous post. Be sure to check that out.
After making these oven roasted carrots, I thought they were just too good not to share with you. They’re the perfect accompaniment to chicken, fish or any roast dinner. And, because this recipe uses only 2 ingredients during roasting, they’re sure to be easy for anyone to cook.
Honey Roasted Carrots – YUM!!!
Honey and Olive oil is all you need for roasting. Once cooked, the Homemade Italian Dressing is drizzled over the carrots minutes before serving. The dressing gives these carrots a flavour at a whole new level. They are super sweet, delicious and yet tangy and tender.
This honey-roasted carrots recipe really is so easy to whip up. It only needs a few simple ingredients for roasting – honey, olive oil, salt and pepper.
Mix a tablespoon of honey with a tablespoon of olive oil and whisk these together until they are both well combined. Pour the mixture over the carrots so that they are well coated.
Place the carrots into a baking sheet in a single layer. Use a rimmed baking sheet. This works best for this recipe because it keeps the caramelised honey juices in the sheet pan.
This is simple and easy cooking at its best. These carrots can be in the oven at the same time as your Sunday Lamb Roast is cooking, while you relax.
These carrots are just as easy for a quick and simple accompaniment to your weeknight steak or sausages.
Honey Roasted Carrots with Herb Dressing
- 24 baby carrots (or 12 medium sized carrots cut in half lengthways)
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tbsp chopped parsley
- salt & pepper
- Wash and trim the carrots (see notes). Place the carrots in a deep bowl and set aside.
- In a small bowl, add the honey and olive oil and whisk until all combined.
- Pour the mixture over the carrots and ensure that they are coated well
- Place the carrots onto a baking sheet and season with salt.
- Pop the tray into a preheated oven of 200C / 400F for 20 minutes. Turn the carrots over and cook for a further 20 minutes.
- If using the baby carrots, there is no need to peel them.
- If using medium sized carrots, cut carrots in half length ways
