Mediterranean Style Chicken Wings

This easy, one dish, baked chicken wings don’t need to be served with a special sauce. They are packed full of flavour and make an easy recipe for a large Sunday lunch crowd. The olives add a saltiness to this dish and the oven roasted are a burst of sweetness in your mouth.

You will need:
- Chicken Wings (of Course)
- Vine tomatoes
- Mixed marinated olives
- Olive oil
Happiness is a Sunday Roast
In a tray, lay out the chicken wings, garlic and potatoes. Using a tablespoon of the olive oil, drizzle over the chicken wings and potatoes and season to taste and let it do it’s magic in the oven for about an hour.
A trick with the rosemary is to coat it with a little olive oil first, massaging the oil well into the herb and then adding it to the roast about 30 minutes before final cooking time. Massaging the rosemary stimulates and releases the natural, fragrant oil and prevents the herb from drying out too quickly.
After the hour of cooking time is up, add the ruby red vine tomatoes and marinated mixed olives and roast for a further 30 minutes.
A flawless, balance of salty olives, sweet, juicy tomatoes and the subtle flavours from the rosemary and oregano makes this a wonderful, effortless recipe the whole family will love.

- 8 chicken wings
- 200 g vine tomatoes
- 200 g mixed marinated olives
- 2 tbsp olive oil
- 2-3 sprigs rosemary
- 1-2 tbsp dried oregano
- 6 cloves garlic
- 3 large potatoes
- salt & pepper to taste
Place the chicken wings, garlic and potatoes in an oven proof dish or tray.
Drizzle 1 tbsp of olive oil over the chicken and potatoes. Season with salt and pepper
Bake for 1 hour in a moderate oven at 160°C | 320°F
Remove the chicken wings from the oven.
Add the tomatoes, olives and rosemary to the chicken wings.
Sprinkle the oregano over the dish and return to the oven for 30 minutes.
