I’ve been patiently waiting to say goodbye to winter and eagerly waiting to say hello to the fabulous, seasonal produce of spring. In fact this week in Sydney we experienced one day that reached 31 degrees & spring is in it’s early days.
Finally the spring sunshine means a change in wardrobe, a variety of seasonal vegetables in the garden & deliciously light & tasty salads. These home grown heirloom tomatoes have always been a favourite of mine. They’re rustic, regal & outrageously colourful & ripened to perfection in the garden. And after whats seems like a long wait, they’re finally here.
The heirlooms make a wonderful Italian Caprese or Panzanella salad or chopped to create the perfect pasta, garlic & basil sauce for quick meal for when guests pop in. They’re juicy, meaty, mealy, plump, luscious, savory, sweet…..in other words delish!
Today I have no guests but I have this beautiful tray of plentiful heirloom tomatoes picked straight from the garden.
It’s so easy to create simple, hearty, healthy salads when you have ingredients this good. I make this one so often in the summer time as the tomatoes are plentiful in the garden. It’s fast, fresh & simple to make & an absolutely pleasure to eat.
Serve with Italian Ciabatta bread, drizzled in olive…..yum!
Heirloom Tomato & Mediterranean Olive Salad
- 2 Heirloom Tomatoes
- Green & Black Olives
- 3 Bocconcini Cheese
- 1 Tbsp Oil
Wash & dry 2 heirloom tomatoes
Pour the juice into a jar, stir in the stevia & add the mint leaves. Shake vigorously (or you can shake it up with a cocktail shaker & ice)
Pour the juice over a glass with ice (without ice if you prefer) then top it up with your favourite sparking water.
Give it a whirl & serve
